Cems and I were discussing country breakfast sausage and he recommended a place called Carroll's in GA. He also said they had great steaks. We stopped by today on our road trip and bought some sausage and 2 T-bones. Haven't had a chance to cook any sausages yet but I grilled the steaks tonight and they were excellent. Thanks again cems. :)

There was never a doubt that cems knows his sausages. What town is this in?

Unfortunately not on this trip. Our original plans were to go through there to stop by and see the breeder that we got my female Rottweiler from but we rerouted to see my wife's childhood friend in Texas on the way home. Maybe next time my friend.

Love seeing threads like this.... member of AU board and there’s always a ton of useful info posted, from recent trips and places to stay and best restaurants,to big ticket purchases and what’s the boards opinion or experience w item,to cuts of meat they grilled lol all in fun but usually good reading.

Like I said, I love those old fashioned meat shops. So much better quality than in supermarkets. It's always nice to have threads that don't have politics in them in the lounge. Glad mine was a nice diversion from the same old same old.

I have to admit that when I went to publix the other day, I was rather surprised to see volpi salami in the cheese and cured meats section. Volpi is literally a small family owned butcher shop in an Italian section of st louis called “The Hill”. They literally run out of a lot of their stuff by 3pm on a regular basis. I tried to see if they could send me their sazitsa sausage over night because it’s that good. They said they don’t even make enough to get through the day and that they don’t do that sorta thing because they just don’t have the staff to work on it. Try any of their products if you see it in the store. Really good.

Anytime my friend. My truck driver friend will be stopping there on Monday. I'm getting 6 pounds of mild smoked sausages. I got plenty steaks for now. Did you stop at your sausage place?

We got 5 pounds each of the fresh links and patty sausage. Will give some to my brother and our niece when we see them in a couple of days. Have not been to N Carolina yet for the air dried sausage. We should be there in about 2 weeks. We are in Williston FL for one more night before heading to Fort Meyers area on Fri.

We had a local sausage maker out here in Utah named Collossimo's that made really good Italian sausage as well as breakfast sausage. A family feud led to them selling it off and the quality went down a bit. Part of the family is in the process of getting it back.

Just cooked up some of the fresh links this morning and they were excellent too. Tomorrow we'll try the patty sausage. PM me when you get a chance.

I traveled through Williston FL many times. That place is as rural as you can get. You appear to be on a long journey through the deep south. Watch out for those speed traps especially in Williston. Lol

Very little speeding on this trip. No hurries no worries is the theme. The RV park we are in made me use gogators as a password for their Wi-Fi. Yuck. I feel so dirty. Lol

There’s a bbq shack east of Williston it’s an old trailer with a porch closed in to order I haven’t been in a few years but it was excellent the ribs . I believe it’s called frogs and yes that part of Florida going north is as southern as south ga and Alabama

We ate at a place called Bubbacues last night in Williston. Had a decent brisket and my wife had ribs and chicken wings. It's neat to try different places once in a while.
 
Frogs is kinda off the radar a side of the road type establishment a real sleeper I use to go to Ocala area a lot in the past and always had to stop and at least get a pork sandwich .

I've stopped at that rib place many times while heading to Tally or Perry. Brings back memories.
 
Well if you’re going that rout you are definitely in the Florida woods I think that area from Williston to Perry is some pretty country in Florida and it’s definitely as country or southern as anywhere in the state . I own some land up in macalapin south of Liveoak big ass granddaddy oak trees and rolling hills.
Nice people up that way

We still have some land in White Springs area north of Lake City. Live Oak down to Williston is where we've been looking at houses. Like you said, a real pretty area of Fla. We've also been looking around the Fellsmere area but they go pretty fast.
 
I’ve got a lot of friends up that way from Ocala to lake city Liveoak you better be retired if you move to white springs or live oak unless your self employed and working from home.
hell Suwanee county is half dry only beer and wine.

We are both retired so that will make it a bit easier. Just looking to slow things down a little and enjoy ourselves while we still can. We are blessed to be able to spend time together at this point.
 
After giving this a bit of thought, Carroll's sausage is the winner with their fresh sausage. Not a lot better than Mac's fresh ground but Carlie C's lagged behind. What Carroll's doesn't have is the Air-Dried and once again Mac's was ahead of Carlie C's by a bit here too. For the grand prize, Carroll's wins over Mac's air dried, but the air dried has such a unique flavor that it is pretty awesome too and we have been eating well lately. Thanks again, cems.

When in Williston go to the Ivey House - wonderful food but closed on Sundays
Not much of anything in Williston
As a kid, I went to Williston and places like Macintosh and Micanopy alot. There was this meat house on this country road that had some of the freshest meats including sausages. I was able to find this place once as an adult. I think it's closed now.

Is that place called pearls country store and bbq they have outstanding bbq
 
Haven’t been there in 5 or 6 years but there is or was a farm between Live Oak and Lake City on a dirt road that sold fresh cut meat - really good link homemade sausage and steaks .

Pearls is outside of Micanopy on 441 going north but up there 441 is an old country rd ... they have a gas station and they sell and cater bbq and anything else worth cooking it’s a sleeper too
I dont know how to post a link but search pearls country store in micanopy and the website has all kinds of pictures
